Goat Meat “Taas” Recipe


Taas is a spicy fried goat meat dish, which is very popular in Chitwan. That is why it is also known as "Chitwan Ko Taas."
Ingredients for making Taas
2 lbs boneless Goat meat, thinly sliced into bite-size pieces
1 cup green onion, cut into 1-inch pieces
2 tablespoons fresh coriander, roughly chopped, for garnish
1 cup oil (for cooking)
2 tbsp ginger and garlic paste
1 tbsp coriander and cumin seed powder
1/4th tbsp turmeric powder
1/4th tbsp Szechuan pepper
1 lemon juice
1 tbsp garam masala
4 green chillies chopped
And salt as required
Methods-
Take a mixing bowl to combine all the marinating ingredients. Add Goat meat slices and mix well. Reserve the mixture in a glassware container and refrigerate overnight. Remove the marinated goat meat mixture from the refrigerator at least 30 minutes before cooking, cool down the marinated mixture to room temperature.
Now heat the cooking oil in a large thick-bottomed frying pan (Tawa) under medium heat. Add the marinated goat meat mixture to the heated oil. Spread out the mix in the pan and turn down the heat to low. Cook the goat meat slices in oil by continuously stirring the mixture. Continue to cook until the goat meat slices are fully cooked and have attained caramelisation or crispiness for about 30 minutes.
When goat meat slices are cooked, add the green onions and mix for a minute or two. Take the goat meat or Taas out of the pan by draining the excess oil from it. Place the mixture on a plate and garnish with the chopped coriander. Serve hot with puffed rice or beaten rice, with fresh cucumber and carrot slices and hot pickled radish achar.
